Ingredients
- 1 package ramen, chicken flavor
- 1 tablespoon sriracha
- 1/4 cup shredded carrots
- 1 green onion, sliced
- One 3.325-ounce can straw mushrooms, drained
- One 15-ounce can baby corn, drained
- 2 cups boiling water
- Juice of 1/2 lime
- 2 tablespoons chopped salted peanuts
Instructions
- In a large single-serving bowl, sprinkle in the chicken seasoning from the ramen package. Add the sriracha and lay on the dry ramen noodles. Sprinkle over the shredded carrots and sliced green onion. Add the mushrooms and one-quarter of the baby corn (reserve the rest for another use), then pour the boiling water into the bowl. Set aside for 3 minutes.
- Add the lime juice. Gently stir with a fork, sprinkle over the chopped peanuts and serve.

I am dying to try this but I think I’ll use shrimp flavored Ramen and add some shrimp to the broth!!

Delicious and oh so easy! Only changes I made: less of the package seasoning to cut down sodium, & added baby spinach which I had on hand. Will definitely keep this in my rotation for quick & tasty meal!
