Ingredients
- 3 cucumbers
- 2 cups of plain yogurt
- 1 clove garlic, minced
- 2 teaspoons honey
- 1 lemon
- Fresh or dried dill, to taste
- Water
- Salt
- Pepper
Instructions
- Peel cucumber and remove seeds. Grate to yield 3 cups. In food processor combine cucumbers, yogurt, garlic, honey and a squirt of lemon. Snip in dill. Process until smooth. Slowly add water until creamy. Season with salt and pepper and continue processing. Pour into a bowl. Chill. Serve.

Tasty and refreshing. I added a tiny bit of red onion and a clove more garlic to mine. I also did not feel the need to add any water. I liked the consistency after the puree in my food processor. I also think a tiny bit of mint might enhance the flavor. I might try that next time.
tons of extra cukes has me scrounging for recipies. I used organic vanilla yogurt and basil because that’s what I had. Very easy to make. The basil gave and afterkick so I left out pepper and was able to make a very good, totally green and out of the garden soup. Excellent compliment to spinach sausage basil ‘bugers’ for an easy summer dinner Kids drank shots straight from the blender (i used the blender and cuke chunks to aviod steps) but this was really best icy cold and foamed.
This was very easy to make and very refreshing, the colder you eat it, the better it tastes.
