Ingredients

  1. 1 tablespoon ketchup
  2. 1 tablespoon mayonnaise
  3. 1 teaspoon peeled and finely grated fresh ginger
  4. 1 teaspoon toasted sesame oil
  5. 1 teaspoon soy sauce
  6. 1 teaspoon white vinegar
  7. 2 tablespoons vegetable oil
  8. 2 cloves garlic, smashed
  9. 1 pound cremini mushrooms, quartered
  10. 4 ounces shiitake mushrooms
  11. Chopped fresh cilantro leaves, for serving

Instructions

  1. Stir together the ketchup, mayonnaise, ginger, sesame oil, soy sauce, vinegar and 1 tablespoon water in a small bowl. Set aside.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and cook for 30 seconds. Add the cremini and shiitake mushrooms and 2 tablespoons water. Cook, stirring, until the mushrooms are tender and golden, 7 to 8 minutes. Add the ketchup mixture and stir to coat. Transfer to a serving dish and top with chopped fresh cilantro.
