Roasted Garlic Mushrooms

Ingredients

  1. 2 pounds mixed mushrooms, such as baby bella, shiitake or shimeji, cleaned
  2. 1/4 cup melted unsalted butter
  3. 2 tablespoons extra-virgin olive oil
  4. 1 teaspoon kosher salt
  5. 1/2 teaspoon freshly ground black pepper
  6. 4 cloves garlic, sliced
  7. 2 sprigs rosemary
  8. 2 sprigs thyme

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Add the mushrooms, melted butter, olive oil, salt, pepper, sliced garlic, rosemary sprigs and thyme sprigs to a 9-by-13-inch baking dish. Toss the ingredients together until evenly combined.
  3. Bake until the mushrooms are softened and slightly browned, 30 to 35 minutes. Remove the pan from the oven and discard the rosemary and thyme sprigs.
  4. Serve immediately or keep at room temperature until ready to serve.

A fantastic recipe for mushrooms! Full of flavor and so easy to prepare. I put everything together in just a few minutes, popped it into the oven and jumped on a Zoom call, at the end of which I had a delicious lunch waiting for me.
