S’mores Muffins

Ingredients

  1. 1 cup milk chocolate chips
  2. 1 cup all-purpose flour
  3. 1 1/2 cups graham cracker crumbs (from about 15 whole crackers)
  4. 2 teaspoons baking powder
  5. 1/2 teaspoon salt
  6. 3/4 cup sugar
  7. 1 stick unsalted butter, melted
  8. 1/2 cup whole milk
  9. 1 teaspoon pure vanilla extract
  10. 2 large eggs
  11. 3/4 cup marshmallow cream

Instructions

  1. Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Toss the chocolate chips with 2 teaspoons flour in a small bowl; set aside.
  2. Whisk the remaining flour, the graham cracker crumbs, baking powder and salt in a large bowl. Whisk the sugar, melted butter, milk, vanilla and eggs in a medium bowl until smooth; stir into the flour mixture until just combined. Stir in the chocolate chip mixture.
  3. Divide the batter among the muffin cups, filling them three-quarters of the way. Tap the bottom of the pan lightly on the counter to smooth out the batter. Bake until the muffins are lightly browned and a toothpick inserted into the center comes out clean, 20 to 25 minutes. Let the muffins cool 5 minutes in the pan, then remove to a rack to cool completely.
  4. Top each muffin with 1 tablespoon marshmallow cream. Let set 10 minutes.

Love this recipe. Not big fan of s’mores so i substituted the marshmallow cream for 2 ripe bananas. Then after i just didn’t add the graham crackers and left them out. I also made candied pecans and after baked them in a bundt pan. This was such an amazing recipe!! I have made this recipe over 25+ times and still never disappointed!!! Everyone in my family loves the recipe and it makes me crave for one sometimes!!

These were a hit in my house, who doesn’t love a smore? I used semi-sweet chocolate chips because that is what I had on hand and there were no complaints. The marshmallow cream only lasts one day so don’t put on if you are not going to eat them all. I would make these again.
