Ingredients

  1. Nonstick spray, for spraying muffin tins
  2. 2 sticks salted butter, softened
  3. 1 cup granulated sugar
  4. 2 eggs
  5. 2 cups all-purpose flour
  6. 1 teaspoon baking soda
  7. 1 cup buttermilk
  8. 2 oranges, zested and juiced
  9. 1 cup lightly packed brown sugar

Instructions

  1. Preheat the oven to 375 degrees F. Spray mini muffin tins with nonstick spray.
  2. Cream together the butter and granulated sugar in a large bowl by hand or using an electric mixer. Add the eggs and beat well. Mix in the flour. In a separate bowl, dissolve the baking soda in the buttermilk. Add the buttermilk mixture to the batter along with the orange zest and mix well.
  3. Fill the muffin tins two-thirds full with the batter and bake until lightly browned, 12 to 17 minutes.
  4. In a separate bowl, combine the brown sugar and orange juice (you should have about 1/2 cup juice) and mix well. Drizzle this glaze over the warm muffins in the tins. Remove the muffins while still warm.

This recipe was fantastic. I made normal size muffins in paper liners. The select few I share my culinary tries with, LOVED THEM. Once you put the glaze on, immediately take out of the of the muffin tins, mini or full size. These will be made for years to come.

They stuck to the pan when I made them (really old pan), but when I scraped them all out into a bowl, it was just to good with the caramelized edges to waste. I used cool whip and strawberries and made an amazing trifle with the dilapidated muffins. 10/10 would recommend. Big hit at church.

I just made these muffins.  They are easy to make, taste good and pretty easy to make.  I did have a bit of a problem with the glaze.  I found it to be too runny and also too messy. I would make these again but maybe with a different glaze or none at all.

These were really good, moist muffins.  My family thought there was more of a lemon flavor (i used lil cuties) than orange, but still good citrus flavor.  I also used cake flour, regular milk and added in some butter vanilla emulsion – the batter with citrus zest alone was kind of bland to me.  I baked in reg sized muffin pan and was so surprised at how moist these babies came out!  I will definitely use this recipe (minus the orange zest) as a base for future muffin flavor variations.
