Ingredients

  1. 1 cup vegetable oil, plus extra for the pan (see Cook’s Note)
  2. 3 extra-large eggs
  3. 2 teaspoons pure vanilla extract
  4. 2 cups grated carrots, unpeeled and grated on a box grater
  5. 1 Granny Smith apple, unpeeled and grated on a box grater
  6. 1 (8-ounce) can crushed pineapple, drained
  7. 1/2 cup pecans, roughly chopped
  8. 1/2 cup sweetened shredded coconut
  9. 1/2 cup raisins
  10. 2 1/4 cups all-purpose flour
  11. 1 1/4 cups sugar
  12. 1 tablespoon ground cinnamon
  13. 2 teaspoons baking soda
  14. 1 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  2. In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

Fabulous! A lovely crunch on the outside, carrot-cake like on the inside. I subbed in Egg Beaters, coconut sugar, fresh pineapple, left out the coconut and added 1/4 c flaxseed while only using 2/3 of the sugar.

Whole Foods used to have these muffins and as I looked through the bake goods section of Whole Foods, the muffins they were offering wasn’t as good as it used too so I googled some breakfast muffin recipe and came across this. I always love Ina’s recipe so I gave it a try. It is delicious, better than store bought.

these are delicious! Mine were ready at 25 minutes; I sprinkled a generous amount of sparkling sugar on top just because my family seems to like the extra but no matter the sugar tops, these are moist and just perfect. Such a great breakfast muffin, lunch treat or dessert – you will like the ease of making them and the oh so good result!

We all know that Ina is a real pro. I wanted a healthy quick muffin for my busy daughter. These are a great option, however, a cup of oil is not. Whenever a cake or like recipe calls for oil, I substitute with applesauce, or any other puréed fruit. I used applesauce for this one and it worked out great!

The first couple of times I made this exactly as written. Delicious. I’m not very fond of coconut so I left it out this time and added a mashed banana. I cut back to about 3/4 cup of oil and used fresh chopped pineapple. Even better!
Today I made them with following changes: 1cup whole wheat flour, 1 1/4 white flour, 3/4 cup oil, 3/4 cup sugar and one ripe banana in place of coconut. Other ingredients were as the recipe called for. Still delicious !

These were my first test run recipe for Morning Glory recipes. I usually follow many of Ina’s recipes. But these have a bit too much fat or oil or butter. Bit too much sugar for my taste plus brown sugar works better. So second test run was King Arthur’s recipe. I like those MUCH better. Plus a ton more information as well. For example a question and answer section just scroll down tap on questions versus reviews. Second a hotline number you can call in for answers right away. Plus King Arthur’s is a lot healthier without tasting too healthy. All the pluses that you’d want but not too sweet not too greasy and turns out great. So for THIS recipe I go elsewhere. For many other recipes I check with Ina first.

I stopped twice last week at the coffee shop and got a morning glory muffin at 3.75 each plus tip. How dumb, I just made 2 dozen and the only thing I didn’t already have was a package of shredded carrots. Now the hubby and I both have breakfast all next week!

yes I have. The ppl I gifted the muffins to said these are the best muffins. I’ve misplaced the recipe and I forgot the name of the author. So today I decided to look for the recipe and I found the author: Ina Garten. Yes!!!
