Pesto Farro with Chicken, Smoked Mozzarella and Tomatoes

Ingredients

  1. 1 cup farro
  2. 1 pint grape tomatoes, halved
  3. One 7-ounce container pesto
  4. 2 cooked chicken breasts, diced (about 1 1/2 cups)
  5. Zest and juice of 1 lemon
  6. Kosher salt and freshly ground black pepper
  7. 7 ounces smoked mozzarella, cubed
  8. Grated Parmesan, for serving

Instructions

  1. Cook the farro according to the package instructions.
  2. In a large bowl, combine the warn farro with the tomatoes, pesto, diced chicken and lemon zest and juice. Season with salt and pepper. Stir in the mozzarella last so that it maintains its shape and doesn’t melt completely. Serve with a sprinkle of grated Parmesan.

This was so easy and flavorful! I marinated the chicken breasts for a few hours and baked them. I used feta instead of smoked mozzarella just because that’s what we like. Very filling meal.

Amazingly simple and easy. Farro has now become a staple in my pantry. Prior to adding the halved cherry tomatoes, I gave them some extra “love” with salt, pepper, olive oil, and balsamic vinegar.
