Caprese Avocado Toast

Ingredients

  1. 3 tablespoons salted butter
  2. 2 slices thick-cut sourdough bread
  3. 1 cup halved cherry tomatoes
  4. 1 cup store-bought marinated mozzarella
  5. 3 tablespoons prepared pesto
  6. 1 tablespoon olive oil
  7. Zest and juice of 1 lemon
  8. Kosher salt and freshly ground black pepper
  9. 1 large avocado, halved, pitted and removed from skin
  10. Pinch of red pepper flakes
  11. 2 teaspoons sea salt flakes
  12. 2 tablespoons balsamic glaze
  13. Edible flowers, for garnish

Instructions

  1. Place a nonstick skillet over medium heat and add the butter. When the butter has melted, place the bread in the skillet and cook until golden, about 2 minutes per side. Set aside.
  2. In a bowl, toss the cherry tomatoes, mozzarella, pesto, olive oil, half of the lemon juice and a pinch of kosher salt and black pepper. Set aside.
  3. In a small bowl, smash the avocado with the lemon zest, remaining lemon juice, red pepper flakes and a pinch of kosher salt and black pepper. Divide the avocado mix between the 2 slices of toasted bread and place on 2 small plates.
  4. Give the tomato mixture one last toss. Top each toast with a generous portion of the tomato and mozzarella. Top each with sea salt flakes, balsamic glaze and edible flowers.

1100 calories for ONE SLICE of avocado toast. Typical Ree Drummond. 3 tablespoons of salted butter for 2 pieces of toast?! PLUS PESTO!

I thought this was great even though I didn’t have pesto. I had bottled lime juice, toasted whole grain bread crispy and topped with butter, used light drizzle of balsamic vinegar and chopped up string cheese because that’s what I had. I think it would be outstanding with all right ingredients. I will definitely make it again. Thanks for another great recipe!
