Watermelon Mojitos

Ingredients

  1. 30 large fresh mint leaves, coarsely torn by hand
  2. 3 to 4 thick slices fresh watermelon
  3. 12 ounces light rum, such as Bacardi
  4. 1/2 cup simple syrup
  5. 6 tablespoons freshly squeezed lime juice (3 limes)
  6. Sprigs of mint and spears of watermelon, for serving

Instructions

  1. Use a mortar and pestle to mash the mint leaves. Remove and discard the rind and seeds of the watermelon. Put the fruit into a food processor fitted with the steel blade and puree. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving. 
  2. Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and spears of watermelon. Serve ice cold.

I love this recipe.  However, my husband is diabetic.  So I use a packet of Splenda per drink instead of sugar (depending on the sweetness of the melon and how sweet you like your drinks).  These drinks are awesome with a nibble of feta on the side.  Who doesn’t like watermelon and feta together?

I think its funny that the ppl that rated this less then 5 stars didn’t make the recipe EXACTLY as its written. Well I did, and wow was this amazing! So refreshing and love the rum flavor mixed with the watermelon, HIGHLY RECOMMENDED- another Ina hit!

This is a good variation to an original mojito but I still prefer the original better. I followed the recipe as is and didn’t strain the watermelon puree which I made in the blender. The liked the texture just fine.

Dangerously good. I just moved to Kentucky, and it’s smokin’ hot here… this was the perfect Sunday Fun-day drink! I had an entire half a leftover watermelon and pureed then strained all of it. Made with a mix of mint and basil (the basil was really good as a substitute. We collectively had 6 or 8 drinks, and there was still enough leftover watermelon juice to freeze into ice cubes and use another day.
