Watermelon Mojito

Ingredients

  1. 2 1/2 to 3 pounds watermelon flesh, pits removed
  2. 1/2 cup fresh lime juice
  3. 1/4 cup packed mint leaves, plus more for garnish
  4. 2 1/2 cups white rum
  5. 1/4 cup agave syrup

Instructions

  1. In a blender, puree watermelon, fresh lime juice and mint in batches until smooth. Strain into a pitcher. Mix in rum and syrup. Serve in glasses filled with ice and garnish with mint leaves.

I followed this recipe to a the letter except for the agave syrup. I added simple syrup instead. Very tasty. It was a big hit at my house party!

I have some mint growing in my garden so I can’t wait to make this recipe. Is it hard to strain the watermelon after its pureed? I will definitely find out this weekend. I made Gina Neely’s Brown Sugar Mojito recipe for Father’s Day. That was a winner too!!!!

Can’t seem to find just plain old mint leaves!
Anybody try this with fresh spearmint instead?
I’ll just sit here and sip my rum on the rocks until I hear back from
somebody or until I pass out. It’s a beautiful day to drink rum!
Or anything else, for that matter!

I’ve tried this three ways- With the rum, without the rum, and blend with ice and no rum. I loved it all ways. My four year old niece made it with me when i blended it with ice and she loved it too. I’ll be trying it next time blended with rum!
