Ingredients

  1. 2 ounces dark rum, such as Gosling’s
  2. 1 ounce fresh lime juice
  3. 1/2 ounce Simple Syrup, recipe follows
  4. Ginger beer
  5. Lime wedge, for garnish
  6. 1 cup granulated sugar

Instructions

  1. Fill a Collins glass with ice. Pour in the rum, lime juice and simple syrup. Top off with the ginger beer and garnish with a lime wedge.
  2. Combine the sugar and 1 cup water in a small saucepan and bring to a boil. When the sugar is completely dissolved, remove from the heat and cool to room temperature. Refrigerate, covered, for up to 1 week.
