Almost nothing is more refreshing on a hot day than a Tom Collins, perhaps the Platonic ideal of gin (use the good stuff, says Reiner), lemon juice, bubbles, and sugar.

Ingredients

  1. 3/4 ounce lemon juice
  2. 3/4 ounce simple syrup (equal parts sugar and water)
  3. 2 ounces gin (such as Tanqueray)
  4. Ice cubes
  5. Club soda
  6. Orange wheel
  7. Cherries (Luxardo brand preferred)
  8. Cocktail straw

Instructions

  1. In a cocktail shaker, add lemon juice, simple syrup, and gin. Add ice, cover, and shake. Remove cover and strain into a Collins glass filled with ice cubes. Top with club soda and stir with a bar spoon. Garnish with an orange wheel, a cherry, and a cocktail straw.
