I am a tequila fan. This drink is equally delicious with mezcal or half tequila and half mezcal. I prefer my drinks on the less sweet side. If you like sweeter cocktails, the sugar can be increased; if you are fond of tonic, that can be substituted and will bring another dimension and greater sweetness to the preparation.

Ingredients
- 4 kumquats
- 1/8 teaspoon kosher salt
- 1 teaspoon superfine sugar
- Ice
- 4 ounces tequila
- 6 to 8 ounces club soda
- 1/2 lime, cut into 2 wedges
Instructions
- Slice the kumquats to about 1/8-inch thick and remove the seeds. Place in a glass measuring cup or bowl, then add the salt and sugar. Stir to combine, then allow to sit for 15 minutes. Place ice into 2 lowball cocktail glasses. Add the salted kumquats to the ice, then add the tequila and stir. Top with the club soda and stir again. Garnish with the lime.
