Pina Colada

Ingredients

  1. 1 1/2 cups frozen pineapple chunks
  2. 3/4 cup canned light coconut milk (make sure to stir after opening the can)
  3. 1 1/2 ounces rum
  4. 2 tablespoons shredded coconut
  5. 1 to 2 drops coconut extract
  6. 3 to 5 ice cubes
  7. Fresh pineapple wedges, for garnish

Instructions

  1. Add the pineapple chunks, coconut milk, rum, shredded coconut, coconut extract and ice cubes to a blender and process until smooth and creamy. Pour into glasses and garnish each with a pineapple wedge.

Best ever! If you can’t have a lot of sugar, this is for you! If you want the fatty version that is full of calories and sugar, go for it. This recipe was never designed for that. For those of us who watch our calorie and or sugar intake, this is fabulous!! Fresh fruity and refreshing. Experiment with more pineapple, be sure to stir coconut milk.

I don’t understand the negative reviews…. they said it had ALOT less sugar than a”bar/restaurant ” I found it perfect since I am trying to cut sugar in my diet. I added more rum and pineapple Ice cubes as well frozen pineapple chunks

I added a bit of half and half and it was good. Unfortunately, the coconut shreds leave a not so nice texture.

This isn’t your fatty flavor piña colada from the bar. It is clean and fruity delicious!! I will make this all summer!!

I wanted to like this but honestly it was horrible.  It was so watery and not sweet at all.  We ended up having to add cream of coconut to try and get the flavor somewhat close.  I did like the frozen pineapple’s in it but the taste was way off.  Sorry won’t be making this again.
