Ingredients
- 2 ounces ouzo
- 2 ounces lemon juice
- 1 1/2 ounces Simple Syrup, recipe follows
- 4 ounces pear puree
- 10 ounces sparkling wine
- 4 lemon twists
- 1 cup turbinado sugar
Instructions
- To a cocktail shaker filled with ice, add the ouzo, lemon juice, simple syrup and pear puree. Shake vigorously to chill, then strain into 4 champagne glasses. Top each with sparkling wine and garnish with a lemon twist. Serve.
- Combine the sugar and 1 cup water in a small saucepot and bring to a simmer. Whisk until the sugar is dissolved, then chill until ready to use.
