Ingredients
- 2 cups watermelon pieces (no rind, no seeds)
- 1 tablespoon honey
- 1 ounce fresh lime juice
- 3/4 cup sugar
- 4 ounces neutral-flavored vodka
- 2 ounces fresh lime juice
- 12 to 14 fresh mint leaves, torn
- Club soda, for topping cocktail
Instructions
- For the watermelon ice cubes: Puree the watermelon, honey and lime juice in a blender until smooth. Pour into a square ice cube tray. Freeze until firm, 3 to 4 hours.
- For the simple syrup: Combine the sugar and 3/4 cup water in a small saucepan. Bring to a simmer and shut off the heat. Stir until the sugar dissolves. Cool.
- For the cocktails: Mix the vodka, lime juice, mint leaves and 2 ounces simple syrup in a pitcher filled with ice. Top with club soda. Put 3 watermelon cubes in each of 2 highball glasses and pour the cocktail over.

It’s such refreshing cocktail for summer. I love that watermelon ice cubes are so versatile for the non-alcoholic drinks. We will be adding to our cocktail repertoire. I was wondering how will ice cubes stay fresh in the freezer.
This was absolutely amazing! We could barely get a drop of juice out of the limes, so we used immitation in the drink and real lime juice in the ice cubes! I will definitely make this again!!!

My new favorite summer time drink. In fact, I’m thinking of making a ton of the ice cubes ahead of time so I can drink this into September. It’s delicious and so refreshing. I will be trying it by substituting agave for simple syrup next time. If I could give it six stars I would.
