Lambrusco is a fruity, sweet sparkling wine that was once underrated, but is now taking the world by storm. I love adding oranges as a garnish and adding some bitters for extra bite. This drink is beautiful, dramatic, and a showstopper for any dinner party.

Ingredients
- 1 orange
- 2 dashes orange bitters
- 1/2 ounce freshly squeezed orange juice
- 1 1/2 ounces Campari
- 3 ounces dry Lambrusco, chilled
- 1 Luxardo cherry
- 1 1/2 ounces sparkling water
Instructions
- Cut the top and bottom off the orange. Sprinkle the top cut side with the bitters and refrigerate for 30 minutes.
- Slice a very thin slice of orange from the end with the bitters. Place an ice cube into a glass and top with the orange slice. Add the orange juice, Campari and Lambrusco. Top the orange slice with the cherry and then sparkling water.

I tried this several times. This makes a fine cocktail; I was totally surprised how good it was. I did make adjustments to it. I reduced the Campari to 1 ounce, increased the OJ to 1 ounce and the sparkling water to 3 ounces. I think the quality of the OJ is important for the OJ adjustment. I couldn’t find quality juice oranges here, so I used not-from-concentrate OJ which tends to be a bit watery in my experience. ALSO, soaking the orange for the orange slices with the bitters is a must! It isn’t the same w/o it. I always use Luxardo or Rex cherries for my garnish.
This recipe, Lambrusco Spritz, makes a lighter drink that is more enjoyable for me than the Aperol Spritz. Easy to make and a lovely summer drink.
In the show they kept calling this a Aperol spritz, and made with Campari. Unfortunately a Aperol spritz is made with Aperol not Campari.
