Ingredients

  1. 2 parts coconut rum (recommended: Bacardi)
  2. 5 fresh mint leaves, torn
  3. 1 part coconut cream (recommended: Coco Lopez)
  4. Splash sweetened lime juice (recommended: Rose’s)
  5. Club soda
  6. Mint sprig, for garnish

Instructions

  1. Add ingredients, except club soda, to a cocktail shaker with ice cubes. Shake several times and pour into a chilled high-ball glass. Top with club soda and serve with a sprig of mint to garnish.

I made it last Memorial weekend, and I’m making it again. I didn’t use mint last time, but I’m thinking of trying it.

The club soda cuts down on the sweetness and it’s so refreshing. It was such a hit last year, my husband had to run out and get more rum during our party 🙂

These flavores DO mix well together. Although when making this drink do keep in mind that it is going to be different because it is a twist off of the very CUBAN drink the mojito. Different flavores are pared together in varies ways in other nations. Over all pretty good!!

Daughter made this for the family. Idea was good but did not Wow anybody. Mint, coconut, club soda just didn’t mix well together.
