The Clover Club is rooted in Philadelphia’s pre-Prohibition history. A group of distinguished gentlemen would gather at the Bellevue-Stratford hotel to drink this pretty pink cocktail of gin, lemon juice, and raspberry syrup.

Ingredients
- 1/2 ounce freshly squeezed lemon juice
- 1/2 ounce raspberry syrup, muddle equal parts fresh raspberries and simple syrup, then strain
- 1/2 ounce dry vermouth, Dolin preferred
- 1 1/2 ounces gin, Plymouth preferred
- 1/4 ounce egg white
- Raspberries, for garnish
Instructions
- Put lemon juice, raspberry syrup, dry vermouth, gin, and egg white in a cocktail shaker. Cover and shake (this is called a “dry shake,” because there’s no ice). Remove cover and add ice; then cover and shake again. Pour through a Hawthorne strainer into a chilled glass. Garnish with several raspberries on a pick.
