Not that Champagne needs any dressing up, but this classic adds another level of sparkle by dropping a sugar cube flavored with a few dashes of bitters into a flute glass before filling it up.

Instructions
- Soak a sugar cube with 2 or 3 dashes of bitters. Drop the sugar cube into a flute. Add 3/4 ounce brandy, if desired. Top with sparkling wine.

This is pretty classic. A twist of lemon peel is nice and can be curled at the lip. With a good Champagne I hate to doctor it too much. Perhaps after the first glass you can proceed to this simple cocktail dressing. It is the Champagne Cocktail. If it’s a Cava or other sparkling wine this is a fun way to dress it up. I used to do it with Freixenet.
