Ingredients
- 8 ounces gin
- 4 ounces lemon juice
- 4 ounces Honey Simple Syrup, recipe follows
- Lemon peel, for garnish
- 1/2 cup honey
Instructions
- Vigorously shake the gin, simple syrup and lemon juice over ice, and strain into a chilled cocktail glass. Garnish with the lemon peel.
- In a small saucepan over medium heat the honey and 1/2 cup water until incorporated and dissolved. Cool to room temperature before using.

This makes one serving? That would be a cocktail that delivers quite the wallop. I would say this serves 4. It is very refreshing, I use a mix of lemon and lime. And I use a good raw honey. You can really taste the difference in the honey syrup when you use a good honey. Heating it means it’s no longer raw, but the better flavor is still very present.
Great party cocktail; substituted ginger beer for the gin for a non-alcoholic version with equally good reviews.
I am not much of a “cocktail” drinker, but tried this, and found it really wonderful! Great for summer. Using fresh lemon juice makes all the difference!
