With many variations throughout the Middle East, simple ingredients like mint, parsley and tomatoes come together with bulgur to make this hearty grain salad.

Ingredients

  1. 1/3 cup bulgur
  2. 8 cups loosely packed parsley leaves, chopped
  3. 1 cup chopped fresh mint (preferably spearmint)
  4. 3 scallions, finely chopped
  5. 2 Persian cucumbers, unpeeled, finely chopped
  6. 1/4 cup chopped celery leaves
  7. 1 medium tomato, seeds removed, finely chopped
  8. 4 radishes, finely chopped
  9. 1/4 cup fresh lemon juice
  10. 1/3 cup extra-virgin olive oil
  11. Kosher salt and freshly ground pepper

Instructions

  1. Cook the bulgur as the label directs; cool. Transfer to a large bowl, then stir in the remaining ingredients; season to taste.

Awesome salad!!!!

I did not have radishes, but put some red pepper in instead for color. I also added a little finely chopped mint and arugala because I hade some on hand….Otherwise followed recipe exactly. We loved it and will make it again.
