Spinach and Turkey Patties with Spiced Carrots

The aromatic North African spice blend ras el hanout imparts a touch of heat and earthy flavor to these juicy turkey patties. Pita, yogurt and tender coriander-spiced carrots round out the meal.

Ingredients

  1. 3 6-inch pitas, quartered
  2. 1/4 red onion, roughly chopped
  3. 1 1/4 pounds ground turkey
  4. 1 10-ounce package frozen chopped spinach, thawed and squeezed dry
  5. 2 teaspoons ras el hanout (Moroccan seasoning)
  6. Kosher salt and freshly ground pepper
  7. 3 tablespoons extra-virgin olive oil
  8. 1 teaspoon coriander seeds
  9. 1 pound carrots, thinly sliced on the diagonal
  10. 1/3 cup chopped fresh cilantro, plus more for topping
  11. Juice of 1/2 orange
  12. 1/4 cup plain whole-milk yogurt, stirred

Instructions

  1. Preheat the broiler. Process 2 pita quarters in a food processor to make coarse crumbs. Add the red onion and pulse until finely chopped. Add the turkey, spinach, ras el hanout, 1 teaspoon salt and a few grinds of pepper; pulse until combined. Form the mixture into twelve 4-inch-long, 1/2-inch-thick oval patties on a baking sheet. Brush the patties with 1 tablespoon olive oil; season with salt and pepper. Broil until lightly golden and cooked through, about 6 minutes.
  2. Meanwhile, crush the coriander seeds with the flat side of a knife. Heat a large nonstick skillet over medium-high heat; add the remaining 2 tablespoons olive oil. Add the carrots and coriander and cook, stirring occasionally, until the carrots are tender, 7 to 9 minutes. Remove from the heat and stir in the cilantro and orange juice; season with salt and pepper.
  3. Divide the turkey patties, carrots and the remaining pita quarters among plates. Top the patties with the yogurt and sprinkle the dish with more cilantro.

Tried the patties. They came out fragrant and moist. Served them with tzatziki sauce. I’m thinking of preparing them like small meatballs, as an hours d’oeuvre. I found ras el hanout in my local Middle Eastern market. There are also recipes online if you want to make your own spice blend. Yum! I’ll be having these for movie night.

Used this for my lunch meal prep (added some farro to round out the meal) and it came out great. Will be adding to my regular meal prep rotation. Try adding some harissa to the yogurt sauce if you like some spice!

Our whole family loved this recipe. I found a recipe for the ras el hanout online and it used spices I already had on hand. The carrots had an especially delicious flavor (I used coriander powder). We will definitely enjoy this one again!

I also added some peeled, deseeded, finally chopped cucumber to the yogurt and a dash of cumin which really took it over the top!
