Muhammara

Duff Goldman makes this bold roasted pepper dip for his bandmate Jeff. They traveled together to Algeria, which is where they tried muhammara for the first time. The flavors are salty, sweet, spicy and smoky—and best of all, it takes no time to make in the food processor.

Ingredients

  1. 1 cup walnuts, toasted
  2. 1/2 cup plain breadcrumbs
  3. 3 to 4 jarred roasted red peppers
  4. 2 tablespoons Aleppo pepper (or any mild ground chile pepper)
  5. 1 teaspoon ground cumin
  6. 1/2 teaspoon kosher salt
  7. 1/2 teaspoon sumac
  8. 1/4 teaspoon cayenne pepper (optional)
  9. 3 tablespoon pomegranate molasses
  10. 2 tablespoons extra-virgin olive oil, plus more for drizzling
  11. Juice of 1/2 lemon
  12. 1/2 teaspoon chopped fresh parsley, for sprinkling
  13. Crackers, for serving

Instructions

  1. Add the walnuts, breadcrumbs, roasted red peppers, Aleppo pepper, cumin, salt, sumac and cayenne if using to a food processor and pulse to combine. Add the pomegranate molasses, oil and lemon juice and process until smooth. Transfer to a serving bowl and top with a drizzle of olive oil and the parsley. Serve with crackers.

Easy & so good. I would skip the cayenne if you are using chipotle chili powder. You can also substitute the lemon juice with a vinegar (I used balsamic & lemon balm leaf). Thanks Duff!
