Garlic Cilantro Lime Rice

Ingredients

  1. 1 tablespoon canola oil
  2. 3 cloves garlic, minced
  3. 1 large onion, chopped
  4. 2 cups long-grain rice
  5. 1 teaspoon kosher salt
  6. 3 to 4 cups low-sodium chicken broth
  7. Juice of 3 limes and zest of 2 limes (hold back juice of 1 lime for garnish)
  8. Chopped fresh cilantro, for garnish

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook for 3 to 4 minutes. Reduce the heat to low and add the rice and salt. Cook over a low heat for 3 minutes, stirring constantly to make sure the rice doesn’t burn. Add 2 cups of the broth and the juice and zest of 2 limes and bring it to a boil. Reduce the heat to low, cover and simmer for 10 to 15 minutes or until the rice is done. Add more liquid as needed. The rice shouldn’t be sticky. 
  2. Just before serving, stir through the juice of 1 lime and lots of chopped cilantro.

Way too much lime for me. Recommend only using 2 limes instead of 3.

This might be the best long-grain rice recipe ever. It’s got a wonderful blend of flavors that go perfectly with cilantro lime chicken. I didn’t change one thing, but I did use my homemade stock, so that probably amped it up a bit. Definitely a keeper!

I made this for my visiting retired chef son and husband and we all agreed that it wasn’t worth the trouble. It seemed slightly bitter and needs a kick of something else to perk it up. I was excited about it when I first read the recipe but I’ll not make it again.
