Ingredients
- 1 tablespoon canola oil
- 3 cloves garlic, minced
- 1 large onion, chopped
- 2 cups long-grain rice
- 1 teaspoon kosher salt
- 3 to 4 cups low-sodium chicken broth
- Juice of 3 limes and zest of 2 limes (hold back juice of 1 lime for garnish)
- Chopped fresh cilantro, for garnish
Instructions
- Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook for 3 to 4 minutes. Reduce the heat to low and add the rice and salt. Cook over a low heat for 3 minutes, stirring constantly to make sure the rice doesn’t burn. Add 2 cups of the broth and the juice and zest of 2 limes and bring it to a boil. Reduce the heat to low, cover and simmer for 10 to 15 minutes or until the rice is done. Add more liquid as needed. The rice shouldn’t be sticky.
- Just before serving, stir through the juice of 1 lime and lots of chopped cilantro.

Delicious & easy! 2 cups of broth per 1 cup of rice so double that for 8 people.
Way too much lime for me. Recommend only using 2 limes instead of 3.
This might be the best long-grain rice recipe ever. It’s got a wonderful blend of flavors that go perfectly with cilantro lime chicken. I didn’t change one thing, but I did use my homemade stock, so that probably amped it up a bit. Definitely a keeper!
I used what I had on hand. This recipe is elegant, easy & delicious. Will make again!
Absolute hit. I made it alongside Ellie Krieger’s Mango Barbecue Chicken when we had friends over after we returned from a Caribbean cruise. Great way to top off a vacation and no leftovers to pack up.
This rice was so delicious! A definite keeper!☮️
This rice was great! I would recommend cooking it a little longer than it says so it’s not mushy. Overall taste was amazing!
Simple, fast and absolutely delicious.
2nd time I have made. Such a tasty light dish. Goes with so much.
I made this for my visiting retired chef son and husband and we all agreed that it wasn’t worth the trouble. It seemed slightly bitter and needs a kick of something else to perk it up. I was excited about it when I first read the recipe but I’ll not make it again.
