Ingredients
- 4 limes
- 1 cup tequila
- 1/4 cup olive oil
- 2 teaspoons kosher salt
- 5 cloves garlic
- 1 jalapeno, sliced
- 1/2 bunch chopped fresh cilantro
- 12 boneless, skinless chicken breasts
- 2 cups grated Monterey Jack
- Corn tortillas
- Flour tortillas
- Grated Monterey Jack
- Pico de gallo
- Jalapeno slices
- Lime wedges
- Avocado slices
- Sour cream
Instructions
- Slice open the limes and squeeze the juice into a food processor or blender. Add the tequila, olive oil, salt, garlic, jalapenos and cilantro. Blend the mixture until totally combined. Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.
- Remove the chicken from the bag and grill it over medium-high heat. Rotate the chicken 45-degrees on both sides to create nice grill marks, and continue grilling until the chicken is cooked through, 4 to 5 minutes per side.
- Melt the Monterey Jack over the top of the sliced chicken breasts.
- Slice the chicken and serve it on a plate topped with the sides.

Excellent. Used key lime juice in marinade. Cooked on grill and it was delicious with sauteed onions and peppers and flour tortilla. We loved it served with spanish rice. Topped chicken with salsa and sour cream.
We really enjoyed this! I brined my chicken breasts before marinating. Some other reviewers said they thought the recipe was a little bland so I added thinly sliced jalapeño under the cheese before melting. Husband loved it and not too spicy for me since I removed most of the ribs and seeds.
First time making this recipe and I found it easy to make. The chicken came out very juicy and had some nice flavor to them. I did add more marinade to the chicken while it was cooking. My son who is a very picky eaters had three tacos and said it was good and would have again

This recipe is one of my favorites. I am not a fan of Mexican food, but my husband is. I make this chicken and he can turn it into tacos and I can eat it with potatoes. It is very versatile and has amazing flavor once grilled.
I’ve made this many times, it’s amazing. Great for get together s with family and friends for a southwest themed dinner.

Smelling the marinade the tequila is overwhelming, but after it was cooked up I didn’t taste or smell it at all.
