Spicy Breakfast Quesadillas

Your entire family will enjoy this spicily delicious breakfast or brunch with sausage, eggs, cheese, and green onions. This dish is really adaptable. Basically, I use whatever is on hand at the time to produce them. If preferred, top with sour cream, salsa, and hot sauce before serving.

Ingredients

  1. cooking spray
  2. 2 (4 ounce) links spicy pork breakfast sausage
  3. 3 large eggs
  4. 2 tablespoons milk
  5. 3 tablespoons chopped green onions
  6. salt and ground black pepper to taste
  7. 4 (6 inch) flour tortillas
  8. 2 tablespoons nacho cheese sauce, or to taste

Instructions

  1. Spray a skillet with cooking spray and heat over medium-low heat. Add sausages and cook, turning often, until cooked through and browned, 12 to 16 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Remove sausages from the skillet and chop when cool enough to handle.
  2. Beat eggs in a small bowl with milk.
  3. Spray a small skillet with cooking spray and set over low heat. Add the beaten eggs, green onions, salt, and pepper; cook until edges are set, then gently turn with a spatula until scrambled, 3 to 5 minutes. Remove eggs to a plate and wipe out the skillet with a paper towel.
  4. Place 1 tortilla in the skillet over low heat. Top with 1/2 of the nacho cheese sauce, 1/2 of the chopped sausage, and 1/2 of the scrambled eggs. Top with another tortilla and cook, carefully turning once, just until lightly browned on both sides, about 5 minutes. Remove to a plate and repeat to cook remaining quesadilla.
  5. You can change the ingredients to your liking. I like bacon, but my husband prefers them with sausage.

I thought this was delicious. Honestly, the only thing I changed was that I added an egg and doubled the cheese amount. Other than that, this is a keeper for us.

Great idea that inspired us to make our own version. Used Turkey sausage, jalapeno, hot pepper jack. Didn’t have flour tortillas so we used corn tortillas. Dollop of guacamole and salsa. Delicious and filling!!

Ever see a recipe and think; now why didn’t I think of this sooner? I am eating my second quesadilla as I type this review! As per the submitter, this IS very versatile! Example, I prefer bacon and accidentally bought microwaveable – which made this even quicker. If I did want sausage, like the previous reviewer, would use crumbled, not links. Added some flair by sautéing some diced onions and peppers first in a little butter. Added a 1/2 tsp homemade taco seasoning to the sauté. Finally added the eggs and mixed in crumbled bacon. Used pepper Jack cheese. So good!! Hot sauce, salsa and sour cream all great dipping! Thank you for an easy and tasty breakfast recipe!!! A keeper!!

These are very yummy served with some salsa and sour cream. I made two changes: I used crumbled sausage instead of links, and I used shredded Mexican blend cheese instead of nacho cheese. Very filling. I couldn’t eat all of mine and will save the rest for lunch.
