Sheet Pan Mahi Mahi Fajitas

Every bite is a surprise, bursting with a variety of flavors! There isn’t a meat dish? It’s no issue. This can be a side or a major dish. Good idea for a luncheon!

Ingredients

  1. 3 tablespoons olive oil
  2. 2 tablespoons lemon juice
  3. 2 teaspoons chili powder
  4. 1 teaspoon ground cumin
  5. ½ teaspoon onion powder
  6. ½ teaspoon garlic salt
  7. ⅛ teaspoon black pepper
  8. 1 pinch cayenne pepper, or to taste
  9. 2 medium bell peppers, sliced
  10. 1 large white onion, sliced
  11. 4 (4 ounce) mahi mahi fillets, cut into 1-inch slices

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.
  2. Stir olive oil, lemon juice, chili powder, cumin, onion powder, garlic salt, black pepper, and cayenne together in a bowl.
  3. Spread bell peppers and onion on the prepared sheet pan. Pour 1/2 the marinade over vegetables; toss until well coated.
  4. Roast vegetables in the preheated oven for 10 minutes.
  5. While vegetables are cooking, place mahi mahi in a bowl and cover with remaining marinade; toss until well coated. Let sit for 10 minutes.
  6. Remove vegetables from the oven and set mahi mahi pieces on top. Return to the oven and cook until fish is cooked through and flakes easily with a fork, about 12 more minutes.
  7. You can also make this recipe with cod or halibut instead of mahi mahi.

Back on track to healthy eating today. Defrosted some mahi I bought at Aldi. I cut back on the oil. It turned out absolutely delicious. Thank you so much for this idea – a big keeper!!

My whole family loved this. Delicious and easy. I doubled the marinade, used lime instead of lemon juice and added a can of green chillies to the marinade. I think it would also be great as is, but you will definitely want more of the marinade!
