Ingredients
- ¼ cup vegetable oil
- 1 (10 ounce) package corn tortillas
- 1 (16 ounce) package Cheddar cheese, grated
- 2 (19 ounce) cans chili without beans (such as Wolf Brand ®)
- 1 small onion, chopped
- 1 (8 ounce) package processed cheese, cubed, divided
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 baking dish.
- Warm oil in a small skillet. Use tongs to dip tortillas into the oil one at a time, turning to warm both sides. Sprinkle an even amount of Cheddar cheese down the center of each warmed tortilla. Roll tortillas to enclose cheese; place seam side down in the prepared baking dish.
- Combine the chili, onion, and half of the processed cheese in a large bowl. Pour the chili mixture over the tortillas; top with the remaining processed cheese.
- Bake in the preheated oven until hot and bubbly, about 20 minutes.

This was a great recipe! My mom used to make these when I was younger, and I recently got a hankering for them. She’s passed now, so I’m not able to go to her to get old recipes like this anymore, so I’m very thankful you put this up. It tasted exactly as I remember them. I will say, I know she never used processed cheese, so I added an extra 8 oz of shredded cheddar in place of it.
These taste amazing. They’re so bad for your health. It’s great, however, for an easy to make drunk/hangover meal.

Everything was good about this recipe except there was too much raw onion. Next time I’ll sauté the onion before or leave them out completely.
My family and I were not a fan of these. The filling has the consistency and taste of something akin to spinach dip. And the “scant half cup” of filling the recipe calls for is WAY too much. Less than a quarter cup of filling would make them a little more edible.
Good simple, quick easy TexMex. Perfect for busy moms. By the way, keep in mind cheap or bargain cheese does not melt well so if that was used it is not going to melt well but shiny and rubbery if there’s a melting issue. Otherwise, a recipe has nothing to do with how a cheese melts or does not melt. Wolf brand chili, LOL a classic and haven’t been able to keep it out of my son’s hands since he was 13. So this is a big hit, economical and a smash when he has game night with a bowl of corn chips and friends. Nothing fancy, a tasty fast family night yes for us.

I’m not sure what I was expecting, but this wasn’t it. Made exactly like the recipe, and it was not good.
Second time around I am not using the chili, do not think it added a lot. Using the enchilada sauce on this web site instead, see how that goes.

Perfect recipe!! I live by myself inexpensive way to eat and made three meals with it!! Delicious!! I think next time I’m going to use a packet of seasonings I bought to add. I forgot to use it. It was still good without it but I thought the spices might kick it up a notch!! Thank you for an easy and protein filled meal!!

This dish turned out excellent! I added some more hamburger and I used tostitos nacho cheese instead of velveta I also used a can of Stagg chili with beans cause I like beans . I will be making this again. Thank you for this recipe.
