Delicious cinnamon-spiced apple dumplings are made by encasing crisp apples in flaky biscuit dough and topping them with a luscious butter sauce. When biscuit dough in a can was first created, my grandma received this recipe from her grandmother. And our family hasn’t stopped producing it ever!

Ingredients

  1. 1 pound cooked ham, chopped
  2. ¾ cup sliced green onions
  3. ¾ cup chopped green bell peppers
  4. 3 cups shredded Cheddar cheese, divided
  5. 10 (7-inch) flour tortillas
  6. 5 eggs, beaten
  7. 2 cups half-and-half cream
  8. ½ cup milk
  9. 1 tablespoon all-purpose flour
  10. ¼ teaspoon garlic powder
  11. 1 dash hot pepper sauce

Instructions

  1. Place ham in food processor, and pulse until finely ground. Mix together ham, green onions, and green peppers. Spoon 1/3 cup of ham mixture and 3 tablespoons shredded cheese onto each tortilla, then roll up. Carefully place filled tortillas, seam side down, in a greased 9×13-inch baking dish.
  2. In a medium bowl, mix together eggs, cream, and milk, flour, garlic powder, and hot pepper sauce. Pour egg mixture over tortillas. Cover, and refrigerate 8 hours to overnight.
  3. The next morning, preheat the oven to 350 degrees F (175 degrees C).
  4. Bake, uncovered, in preheated oven for 50 to 60 minutes, or until set. Sprinkle casserole with remaining 1 cup shredded cheese. Bake about 3 minutes more, or until cheese melts. Let stand a least 10 minutes before serving.

Absolutely delicious! I used deli ham and didn’t chop it up. Also used green chilis instead of peppers. And, I only used the 2 cups of half and half. Skipped the extra milk. It was just delicious!

This is wonderful! Have been making this for Christmas morning for years. I do substitute cooked bacon for the ham. Very easy if you pre-cook bacon and keep it in freezer. Onions and peppers are pre-cut day before along with egg mixture.

These were excellent! I made them lower carb by using low carb tortillas, and eliminating the flour. Added fresh spinach to the veggies and a combination of ground and chopped ham. Used 6 eggs, 1.25c of heavy cream and 1/2cup of almond milk and water to bring it to 2 cups total. Combination of cheese that was in the fridge. Will definitely make again!

I read the reviews and made some changes. I added a 6th egg, used yellow instead of green pepper and substituted sausage for the ham. Everyone loved it. Being able to make it the night before is a great time saver.

Everyone loved it. I used ground breakfast sausage instead of ham. I browned the sausage with red bell pepper and the green onions. The ham would be good too but ground sausage was easier. Next time I plan to use the ham.

I don’t have a food processor so just used shaved ham. No hot sauce, as kids would be eating it. I tried to roll the tortillas tightly, but the liquid didn’t completely cover them, which I read in other reviews was a problem with no solution. I had to bake them 70 minutes until they were set. The end result was okay, but kinda plain and I would’ve preferred something else. I brought it to a potluck that had 20 attendees and I took half of it home, so it was a mediocre sell there as well. would skip it.

Excellent, even in spite of the fact that I decided to make it last minute so the eggs did not soak the enchiladas overnight. I also left my ham in strips and chunks so as not to wake sleeping family members by using the food processor. Very tasty!

Loved this recipe and will definitely make it again. The only change made was that we only used 4 flour tacos to put the ham filling in. Thinking about adding black beans into the food processor with the ham next time.

This was ok. I made it as listed with the exception of cutting it in half for the two of us, but I think it would have better with corn tortillas. I think I’ll stick Huevos Rancheros.

I LOVED these enchiladas, served with AR Pico de Gallo, sour cream and avocado. Halved the recipe for the two of us.I substituted a blackened poblano for the green bell pepper as that’s what I had on hand. Delicious! Added 1 teaspoon ground cumin and doubled the garlic powder and hot sauce. We like a lot of flavor and these did not disappoint! My husband isn’t too keen on breakfast foods for dinner, but I loved them. He can eat the leftovers for breakfast!

We didn’t have ham, so used breakfast sausage instead. We liked how the tortillas were a little crisp on the top. We felt it needed salt and pepper and perhaps some kind of cheesy sauce or salsa would be a nice addition. Would be great with pico de gallo.
