I came up with this avocado chicken salad while searching for a quick snack to bring to work. Everyone I’ve made it for enjoys it very much! Serve with chips, pita bread, your preferred bread, etc.

Ingredients

  1. ¼ cup mayonnaise
  2. 1 tablespoon sugar-free ketchup
  3. 1 teaspoon mustard
  4. 1 teaspoon pickle juice
  5. 1 teaspoon apple cider vinegar
  6. 1 ¼ teaspoons salt, divided
  7. ¾ teaspoon ground black pepper, divided
  8. 12 slices dill pickle
  9. 1 pound ground beef
  10. ½ cup diced onion
  11. 2 teaspoons Worcestershire sauce
  12. 6 (8 inch) low-carb tortillas
  13. 1 ½ cups shredded Cheddar cheese
  14. avocado oil cooking spray
  15. 1 teaspoon sesame seeds, or to taste (Optional)
  16. 1 ½ cups shredded romaine lettuce, or to taste

Instructions

  1. Mix mayonnaise, ketchup, mustard, pickle juice, vinegar, ¼ teaspoon salt, and ¼ teaspoon pepper together in a small bowl until well combined. Cut each pickle slice in quarters for 48 total pieces. Set both aside.
  2. Heat a skillet over medium-high heat. Add ground beef and cook, crumbling with a spoon and stirring often, until browned, 5 to 7 minutes. Drain grease (if desired). Add onion to the beef and cook for 2 minutes. Stir in Worcestershire sauce, remaining 1 teaspoon salt, and remaining ½ teaspoon pepper. Remove from the heat.
  3. Place one tortilla on a work surface. Add ½ cup Cheddar cheese. Top with about ½ cup beef mixture, 8 pieces pickle, and about 1 teaspoon sauce. Fold in the sides of the tortilla and roll over the filling into a burrito. Place burrito, seam-side down, on a plate while you prepare the remaining burritos.
  4. Spray each burrito with cooking spray and sprinkle with sesame seeds. Place, seam-side down, in the air fryer basket.
  5. Air-fry at 375 degrees F (190 degrees C) until golden and toasted, 5 to 7 minutes.
  6. Serve with the remaining sauce and shredded lettuce.
  7. You can use regular tortillas, if you like.

Big Macs must taste a lot different in the US than they do in Canada because this did not taste like any Big Macs I’ve ever had. Same with my husband. It was okay but not a keeper.

If you like Big Macs, you are sure to like this twist on them! My husband loves BM so I made these just for him and he devoured! Only change was sautéing the onions with the ground beef so they were soft/cooked well. Also and this is minor! – but the lettuce made eating a bit awkward; balance the lettuce carefully on the wrap before biting in? Fork? Cut in half? But with no lettuce, felt like something was missing. Again; MINOR! Overall these were fun and tasty and hubs already asked when I plan to make these again. Thanks Nicole!!
