Ingredients

  1. 1 tablespoon good olive oil
  2. 3 cups chopped yellow onions (3 onions)
  3. 1 teaspoon chopped fresh thyme leaves
  4. 2 teaspoons kosher salt
  5. 1 teaspoon freshly ground black pepper
  6. 3 tablespoons Worcestershire sauce
  7. 1/3 cup canned chicken stock or broth
  8. 1 tablespoon tomato paste
  9. 2 1/2 pounds ground chuck (81 percent lean)
  10. 1/2 cup plain dry bread crumbs (recommended: Progresso)
  11. 2 extra-large eggs, beaten
  12. 1/2 cup ketchup (recommended: Heinz)

Instructions

  1. Preheat the oven to 325 degrees F.
  2. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  3. In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don’t mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Marcia Made 5/15/24. This meatloaf was beyond excellent ! I followed recipe but substituted 1 tsp . Italian Seasoning because I did not have fresh thyme . Also made 12 C . ketchup plus 1/2 C . chili sauce & 2 Tbsp . brown sugar for the topping for my sauce . The topping sauce was so delicious .

I have made this meatloaf several times. It seems I only have two pounds of ground beef on hand when I make it, but it turns out fine. It is a delicious recipe that makes a big meatloaf and delicious leftovers. Great with mashed potatoes, corn and a salad. I follow the recipe as written. The sautéed onions are a big taste factor.

Fantastic!! Changed it a bit t make it my own. Added chopped mushrooms to onion mix, used ground beef, turkey and chicken, doubled the bread crumbs (GF progresso), once meat in pan I poured some red wine over top and worked into meat with fork and lastly instead of ketchup I heated tomato paste and mixed in brown sugar then put the over the meat

Delicious meatloaf. Followed advice from a reviewer. I made it on a broiler pan so just enough fat drained off so it was not greasy. Family loved it.

My go to recipe! I’d just suggest if your going to add a lot of onion make sure you mince it well and cook it for a longer time.

This was very good, made it for a family gathering and everyone really liked it. Made no modifications but did bake it on a rack over a cookie sheet to drain off fat.

First time I’ve made a good meatloaf! I thought it had a lot of flavor and had just the right amount of spices and liquid to make it moist. I did add a layer of Spinach and Swiss cheese in the middle because that’s how my.mother always made it!
