Ingredients
- 1/4 cup finely crushed corn cereal (such as Corn Flakes)
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 large egg, lightly beaten
- 1/2 tablespoon olive oil
- 1 tablespoon ketchup, plus more for serving
- 2 tablespoons grated Romano cheese
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 8 ounces 96-percent lean ground beef
- Twelve 2 1/2-inch diameter sweet dinner rolls, halved, such as King’s Hawaiian
Instructions
- Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, stir together the cereal, parsley, egg, oil, 1 tablespoon ketchup, cheese, salt, and pepper. Add the ground beef and gently stir to combine. With damp hands, roll the mixture into 12 mini meatballs. Arrange the meatballs on the prepared baking sheet and bake until cooked through, about 15 minutes Cool for 10 minutes.
- Make an indentation in the center of the bottom half of a roll. Slice a meatball in half and put in the indentation. Add about 1 teaspoon of ketchup to the meatballs and cover with the top half of the roll. Repeat with the remaining rolls and filling.
- Arrange the sandies on a platter and serve.

To me this was just OK. Nothing was spectacular about this. Very easy to put together, though.
Not very good
Our family loves recipes that my husband, my 2 1/2 year-old daughter, and myself all like to eat! These were kind of like a cross between mini meatball sandies and mini hamburgers. My daughter sure does love anything with ketchup, and she is a meatball fanatic. These were a hit with her, although she preferred them off the bun. My hubby and I thought they were very yummy and had them with a side of bucatini in a simple garlic and oil sauce. Thanks for another winner, Giada!
Great recipe. Very moist and delicious and my family and I had a hard time stopping from eating more. I used an Italian hoagie roll instead of the Hawaiian bread, as I didn’t want all the fat, sugar and calories from that kind of bread. I accidentally forgot to add in the olive oil, and I realized it after putting them in the oven and quickly sprayed Pam on top. Came out great and saved cut back on the fat and calories! Will definitely be making this again! And the meatballs on their own are awesome!!

These are awesome and taste sooo good! I’m always looking for recipes that my picky family will love and these got them to come back for more. Something about the sweet taste of the rolls coupled with the ketchup and meat are an amazing combination. Don’t be put off at how messy they are to make, trust me the end result is worth it. The only problem is that I need to double the recipe every time!
These are so delicious! Just that i recommend not to put so much parsley and a pinch more of salt

love these so much… i make them all the time not just for sandwiches but for pasta as well, it is so easy to make and fun, it’s totally kid friendly, and it is very easy to add your own ing. to it, like i add thyme, rosemary, and red hot pepper flakes, and i have also made them with ground turkey before and they turned out just as great, love this recipe!

My 6 year old made them by himself and they came out great, a bit salty though. We had them with spaghetti yum!
Next time will slash the salt and I’m thinking swiping the parsley for basil, or maybe just add it
