Turkey Spaghetti Zoodles

For two people, try this simple but delicious salmon meal. Usually, I serve it with a side of salad and basmati rice. Excellent for the week.

Ingredients

  1. 1 teaspoon extra-virgin olive oil
  2. 1 ¼ pounds ground turkey breast
  3. 1 cup diced green bell pepper
  4. 1 tablespoon minced garlic
  5. 2 teaspoons Italian seasoning
  6. ½ teaspoon ground black pepper
  7. ¼ teaspoon salt
  8. ¼ teaspoon red pepper flakes
  9. 3 cups marinara sauce
  10. 2 cups baby spinach leaves
  11. 4 zucchini, cut into noodle-shape strands

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add turkey breast, green pepper, garlic, Italian seasoning, ground black pepper, salt, and red pepper flakes; cook and stir until turkey is lightly browned, 4 to 5 minutes.
  2. Stir marinara sauce and baby spinach into the turkey mixture; cook and stir until marinara sauce is warm through, about 3 minutes.
  3. Stir zucchini noodles into the sauce with tongs; cook and stir until the zucchini is slightly tender, 2 to 3 minutes.
  4. I use an organic, no salt added, low-sugar marinara sauce.
  5. Use a spiralizer or vegetable peeler to make the zucchini noodles.

I think it’s delicious! I sauted half an onion in some butter and oil and then added the turkey. As the turkey began to brown, I added the spices and garlic, and then the veggies. I used regular spaghetti sauce and added more salt to taste. I let it simmer a bit and then I added juice from half a lemon. DELICOUS. I put this sauce over regular spaghetti pasta, not zucchini noodles (using what I got, ya know?)

Mine turned out watery. I definitely needed to either simmer longer or pre-cook the zucchini. Also I think you want relatively small zucchini; 4 large ones will give you too many zoodles. But otherwise it’s tasty, and really for a recipe like this you can’t go too far wrong as long as you’re using a premade sauce you like.

This is so good!! I used some peppers and onions that I had already cooked up as well as some roasted garlic in oil that I already had. I used Nature’s Promise Organic Marinara Pasta Sauce and the entire 5 ounces of Nature’s Promise Organic Baby Spinach. I cut back on the red pepper flakes. It had just enough heat. Perfect!! I haven’t used this with the zucchini yet. It is a great healthy dish.

Made this with a chopped onion, little more garlic, sliced mushrooms, and our homemade marinara from our garden tomatoes we canned. Cooked the zucchini noodles in the microwave on paper towels for about 5 minutes, then added them. Dear husband and I absolutely loved it! Had it with freshly-grated Romano on top, with some homemade Zero-carb garlic-mozzarella toast. Heaven on a cold, Illinois January day. Definitely a keeper!!

Soo Good!! Soo Easy!! Only change I made was to caramelize an onion as I was prepping all the veggies. I made this in my electric frying pan, so even clean up was a breeze. My husband loved it even though he had never heard of zoodles before! Thanks so much for sharing this recipe….

This is a fantastic recipe! Unfortunately, my husband does not do well with bell pepper so I skipped it. Did not turn out soupy at all. I will add sauted onion next time as I add onion to most recipes. Thank you for sharing.

I am very pleased with this dish. I made it tonight with very few changes. I had to take advantage of the fact that my husband is out of town to try this, because I had to make sure that it is delicious before I try “zoodles” on him. I omitted the olive oil since the recipe said to sauté the turkey and garlic together. I added a little red wine because I love adding wine to marinara. The only other change I made was using asparagus because I didn’t have spinach and I LOVE asparagus. Oh, and I added some shredded parmesan when served. Yum!

Just made this tonight and it was a huge hit! I didn’t have ground turkey on hand but I did have frozen, uncooked shrimp that I thawed and tossed them with a little lemon pepper. I sautéed an onion with the garlic, green pepper, red pepper flakes, and added a can of diced tomatoes along with some tomato sauce. Let it reduce down so it wasn’t watery. Put the zucchini noodles in the sauce the same time as the shrimp. 3 minutes later it was done and delicious! I know there were several changes, but I think this recipe is such a good one that you can use it in many variations. Love that you can have a lot of ‘pasta’ and you don’t feel full or stuffed after the meal. Served with side salad & small slice of garlic toast.
