Turkey Bolognese with Penne

Ingredients

  1. 2 tablespoons olive oil
  2. 1 pound ground turkey
  3. ¾ cup chopped carrots
  4. ½ cup chopped onion
  5. ½ cup chopped celery
  6. 4 cloves garlic, minced
  7. 1 tablespoon ground thyme
  8. 1 pinch red pepper flakes
  9. ¼ cup dry white wine
  10. 2 cups tomato sauce
  11. ½ cup tomato juice
  12. 2 tablespoons dried parsley
  13. 1 (8 ounce) package penne pasta
  14. ½ cup grated Parmesan cheese
  15. salt and ground black pepper to taste

Instructions

  1. Heat oil in a large skillet over high heat. Add ground turkey and cook until well browned, 5 to 7 minutes. Add carrots, onion, celery, garlic, thyme, and red pepper flakes. Cook and stir until vegetables are tender, 5 to 10 minutes. Drain and discard grease, if necessary. Add white wine; cook and stir until almost completely evaporated, about 5 minutes. Add tomato sauce, tomato juice, and parsley. Reduce heat and simmer until sauce reaches a thick consistency, about 20 minutes.
  2. Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and return to the pot. Add the sauce and Parmesan cheese; mix well. Season with salt and pepper.
  3. You can substitute ground chicken or beef for ground turkey.
  4. If you do not have tomato juice on hand, pour 1/2 cup water into tomato sauce can/jar, shake or swirl, and you’ve got your tomato juice!

I love this recipe and have made it many times. I will admit to cheating and using Vodka Sauce from a jar with it.

This was delicious! I substituted thin spaghetti for the penne. I also used chicken broth and tomato puree in lieu of the tomato sauce. Parmesan was served on the side.

This turned out great! I had some ground turkey that needed used and made two different recipes off this site. This one was by far the better of the two. I liked that this used tomato sauce and juice instead of canned diced tomatoes and the flavor was just overall better.
