Ingredients

  1. 28 ounces fresh, ground spicy pork sausage
  2. 1 cup uncooked long-grain rice
  3. 1 slice onion, diced
  4. 3 cloves garlic, minced
  5. 1 green bell pepper, chopped
  6. 1 red bell pepper, chopped
  7. 1 (28 ounce) can whole peeled tomatoes, crushed
  8. 1 cup chicken broth
  9. 1 teaspoon salt
  10. 1 teaspoon ground black pepper
  11. 1 teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Brown sausage in a skillet over medium-high heat; drain grease. Add rice, onion, garlic, and peppers; cook and stir for 5 minutes. Stir in tomatoes, chicken broth, salt, pepper, and cayenne pepper. Transfer into a 9×13-inch baking dish.
  3. Bake in the preheated oven until rice is tender and most of the liquid is absorbed, about 1 hour.

This was really good, I used yellow bell peppers & sweet Italian sausage because that’s what I had on hand and it was a hit with my family. We will make this again.

I made this in July 22, tried it with hot breakfast sausage first, then used chorizo, which is what it probably calls for with the enigmatic spicy pork sausage moniker. I cut the cayenne with the breakfast sausage, but used everything full strength for the second and was delighted both times. Daughter enjoyed the breakfast sausage version better, I enjoyed the chorizo more. I only made it with a pound of meat each time, 28 oz. is such an odd number, you have leftovers or whatever. Today I found a 14 oz. package of chorizo from Mexico and now get the amounts. I look forward to making this as written soon.

This was so delicious and so easy to put together. The only change I made was using a Chilean spice called Merken instead of Cayenne. Soooo good. This will be a monthly meal for sure. Oh…I used the spicy sausage from Costco which was also yummy.

Made it as written and great. To make it fast for a weeknight, I made the sauce on the weekend, leaving out the rice. On the weekday I wanted to cook it, I mixed in the rice, put it in the pan and popped it in the oven while I went to the gym and picked up kids. It was ready when we got home, perfect! Very versatile, I could see adding celery, green chiles, okra or chicken to this dish as well.

My family loved this! My 4 year old and daughter thought it was too spicy, so I use regular sausage and reduce the cayenne to 1/4 tsp. My boys loved the spicy version. I also upped the chicken broth to 2 cups. I do suggest stirring 2-3 times while it is baking to make sure that all the rice gets cooked through. A keeper in my house and SO easy and delicious!

This is very easy to make and tasty. I made it exactly as the recipe directed. For less heat use mild sausage or adjust the cayenne pepper. Delicious. The photo is pre bake.

Great dish, I tweaked a bit & cooked on stovetop based on reviews. First, I used spicy Italian chicken sausage (& wow was it ever spicy!!). In addition to a red pepper, small onion, garlic & a can of Rotel, I added 1 stalk finely chopped celery and some matchstick carrots. Added 1 c. white rice & 2 c. low sodium chicken broth. Did not use cayenne but a little black pepper. Cooked for about 20 min til rice was cooked. Delish! Super spicy – may try a different brand of chicken sausage next time. Good excuse to splurge on a glass of chocolate milk though! Nice to have something out of the ordinary 🙂

This is a tasty easy recipe that can be modified to suit your tastes. I used a package of Hillshire Farms bulk hot Italian sausage, an onion, an orange pepper, a few cloves of garlic, a 14 oz can of diced tomatoes, a can of chicken broth and a cup of rice. I sautéed the sausage and veggies first, then drained off the fat. I added the rice and mixed it in. I drained the liquid from the diced tomatoes, added the can of chicken broth and then added enough water to bring the liquid total to two cups. I added that to the pan along with the tomatoes, spiced it with Cajun spice mix, cayenne and black pepper, then brought it to a boil. Then I turned down the heat to simmer, put a cover on and let it cook, stirring occasionally. It probably took 20-25 minutes. My husband and I both enjoyed this and I will definitely make it again.

Based on other reviewers comments I cut back on the spice but not enough. I omitted the pepper but I should have cut the cayenne in half as well. We all love heat but we could barely eat it. I made another batch of plain rice and added that in and then it was great. Yummy comfort food. Will definitely make it again with the adjustments. Thanks for the great recipe.

spicy – I used two regular sausage packages and one hot and it was plenty hot for my family. Good on chips or in tortilla shells with cheese.

i was looking for something to make bf for lunch and found this.. i’m glad i read the reviews, especially BETHANY S.’s.. i used 16 oz kielbasa for the sausage.. upped the rice to 1.5 cups.. only had 1/2 of a green bell pepper so i added 1.5 cups of frozen peas and carrots.. used two cans of fire roasted tomatoes.. 3 cups chicken broth (bouillon).. and subbed Creole Seasoning Blend (on this site) for the salt, black pepper, and cayenne.. like BETHANY S., i just cooked this on the stove top.. a lot easier and cooler than turning on the oven.. ty for the start of something good

Nice easy dish made with ingredients we usually have on hand. I halve the recipe (since I am cooking for two people) using 12-16 oz sausage. If we have hot sausage, we use a 14 oz. can of plain diced tomatoes. If it is regular sausage, we use a can of tomatoes with green chiles. Very adaptable. I do like other reviewers suggested and simmer on the stovetop covered for 20-30 minutes until rice is done.

Very simple. I altered it a little because we like Rotel diced tomatoes with red and green chillies. That emanates the need for red and green peppers. It’s a very simple and fast dish that’s perfect for a cold day.

I thought it looked to mild so I got spicy andouille sausage, ditched the salt and added white pepper instead, and instead of white rise I used brown rice for less carbs. Found that I needed to pull it out of the oven at least 10 minutes early compared to quoted time to prevent over cooking.With these modifications I loved it, and continued to add more spice where I saw fit.
