Spicy Doritos® Chicken

This recipe for a straightforward but delicious pie is quite old. Fundamentally, it is a spiced custard pie, but the lovely thing is that it uses ingredients that are frequently found in kitchens.

Ingredients

  1. 1 egg
  2. 1 tablespoon water
  3. 1 teaspoon cayenne pepper
  4. ¾ cup crushed spicy nacho cheese-flavored tortilla chips (such as Doritos® Spicy)
  5. ⅓ cup whole wheat bread crumbs
  6. ground black pepper to taste
  7. 2 skinless, boneless chicken breasts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Place an oven-proof rack on top of a baking sheet.
  2. Beat egg, water, and cayenne pepper together in a shallow bowl. Mix nacho cheese-flavored chips, bread crumbs, and black pepper together in a separate shallow bowl. Dip chicken into egg mixture until coated; transfer to chip mixture and press to fully cover on both sides. Place coated chicken on the wire rack.
  3. Bake in the preheated oven until no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I marinated the chicken breasts overnight in Italian dressing (if no time – 3 hours is good) And still season with pepper, cayenne, a little garlic powder and Lawreys. Instead of an egg I use Ranch to coat it. Spicy Doritos is a MUST! They now have Ketchup Doritos, I am gonna try those next time!

I used the nacho and cheese doritos then added cayenne pepper to be able to control the heat myself. Loved it and will be making it again.

I added some spicy flour to the Doritos and crumb mix. I read that some people said their was a bit dry, so I took it out of the oven after 10 minutes and wrapped in foil and then continued cooking. It was nice and tender. Will make again.

I cooked it with a convection oven, at 30minutes edges of breast were a bit dry. Breasts were avg size not too thick not too thin. ALSO I USED CHILI POWDER BECAUSE I didn’t have cayenne. I will make it again but will add more spice as it wasn’t spicy enough.

It came out nice and crispy, just like fried chicken. It also had a cheesy undertone. I used regular doritos because I didn’t have spicy. I seasoned the chicken with light black pepper and seasoned salt before i dipped it in the eggs.

Baked this early this morning and then put one humongous chicken breast in the fridge to chill for a luncheon salad. Not only was this tasty, its EASY, and ‘ll be using this often for summer evening main course salads this year. I didn’t have any whole wheat bread crumbs, so I sub’d panko which worked well and cooked the chicken to 165, so it was perfectly cooked, tender, and moist.
