Ingredients
- 1 onion, thinly sliced
- ¼ cup distilled white vinegar
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 2 teaspoons salt
- ½ teaspoon black pepper
- 6 (6 ounce) lamb chops
Instructions
- Mix together onion, vinegar, oil, garlic, salt, and pepper in a large resealable bag. Add lamb, seal bag, and toss to coat. Marinate in the refrigerator for 2 hours.

- Preheat an outdoor grill for medium-high heat.
- Remove lamb from marinade and leave any onions on that stick to meat; discard marinade. Wrap exposed ends of bones with aluminum foil to keep them from burning.
- Cook on the preheated grill to desired doneness, about 3 minutes per side for medium. An instant-read thermometer inserted into the center should read at least 130 degrees F (54 degrees C).

Easy and flavorful! I’m not a big fan of lamb but my husband loves it. So when I saw lamb chops on sale I thought I’d surprise him (and I’d just eat the sides.) But it was so good I had one! Will likely try this marinade for other meats as well.

Did it exactly as recipe calls for with cinnamon and allspice the author recommended, didn’t have the one ingredient in the pantry.

These were amazing!!! Awesome quick and easy recipe. Of course being Hispanic, I had to add more minced garlic, salt and pepper than stated in the recipe. But that’s it!! Lol. I left it in a baggy in the fridge for like 3 or 4 hrs and followed the instructions and perfect. I kept the juices and whatever didn’t stay on the chops when grilled and cooked it in a pan then later poured it on the chops. No other changes. Thank you so much!!!!
Instead of turning on the grill, to save time I tried cooking these in a heavy preheated uncovered aluminum pot in the oven (maybe next time I’ll try the pizza stone). Also dumped in some thyme clippings. Turned out well.
I’ve made these twice now, and these lamb chops are absolutely exquisite! So simple to make. I only marinate them for about 30-40 minutes which is plenty! And definitely grill the onions with the chops — you’ll be glad you kept them. YUM!!
This recipe was great! I seldom cooked lamb because it always came out tasting “musky”. But I followed these directions, also adding a teaspoon of beef shawarma seasoning to the mix. I let my large lamb chop marinate for 2 hours in the refrigerator. Then I grilled it on my tabletop grill for 8 minutes on each side. ( I like well done meat). Following other reviews, I sautéed onions and mushrooms in a small pan and then added them to the lamb while it was grilling. Absolutely delicious!!! Such an easy and tasty recipe.
made this on a 400 degree big green egg turned out awesome. I did modify by adding fresh rosemary to marinade. It was really good rosemary complements lamb really well. My wife likes chops well done which was still good but the chops I cooked for me were medium and excellent !
I love this recipe. I did see the other reviews and marinated for 1 hour. I also used my Ninya air grill. They are very flavorful and tender with a beautiful char look.

Loved it! I used my vacuum sealer marinated gizmo for about 1/2 hr . I didn’t have WDV. so I used ACV. instead. It was so flavorful and tender, . It came out perfect. Will definitely make this again.
