Ingredients
- ½ pound baby red potatoes, halved
- 1 cup baby carrots
- 3 tablespoons olive oil, divided
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- 2 links chorizo sausage
- 1 red onion, quartered
- ¼ bunch fresh asparagus, trimmed
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Place potatoes and carrots on a baking sheet. Season with 2 tablespoons olive oil, salt, black pepper, garlic powder, and smoked paprika; toss until well coated. Place chorizo sausages on top.
- Bake in the preheated oven until sausages are golden, about 15 minutes.
- Remove sausages and slice in rounds. Add red onion and asparagus; place sausage slices on the sheet pan. Drizzle with remaining olive oil; toss to coat.
- Bake in the preheated oven until vegetables are golden and roasted, about 15 minutes more.

What to say without being rude. First, my fault (partially) – I used Mexican Chorizo (sealed in a non-refrigerated pouch.) In fairness, the recipe didn’t make clear what KIND of chorizo. Mine were inedible. A plus: It was “pretty.” But it was oily, and who can eat half a red onion, even cooked (which it really wasn’t.)
My husband and I both loved it. Followed everything except for the chorizo. I only had smoked sausage on hand. It was so easy and fast. Thanks for this recipe. It’s a keeper.
This was delicious, easy, and fast! I substituted green beans for the asparagus. Would 100% make this again!
The veggies were delicious. However, I must have bought the wrong chorizo. It was ground chorizo shaped into a link. I was surprised when I opened the package because there was no casing. I didn’t care for the consistency of the ground chorizo. I will have to make it again but try to find the correct chorizo. Unfortunately, what I bought was all the store had.
Delicious dinner! Our asparagus didn’t come in my produce box, so I swapped it for some baby kale tossed in at the end. It was still fantastic and an easy delicious dinner.

SO easy and delicious! Used Miled Italian sausages vs chorizo. Needed a bit longer for more tender potatoes; 25 min each time vs 15. Can’t wait to have it again!
I modified the recipe a little only thing u changed is I didnt have asparagus so I used a mix of other vegetables but everything else the same I feel this recipe works well with any vegetables
I omitted the potatoes and onions and used 4 cups of baby carrots and 2 bunches of asparagus. Also used smoked turkey sausage to make it healthier as well. Family loved this. Thank you.

I make this dish with hard dry cured Spanish chorizo. It is very different from Mexican chorizo and is great for this recipe. I cut the chorizo with scissors and fry it until the oils run then I add the other ingredients except for the garlic. The chorizo has enough spice for us.
