Scrumptious Stuffed Chicken Breasts

I enjoy trying new recipes in the kitchen. I frequently get ideas for my own recipes from ones I see on the many cooking shows I follow. When considering what to do with the thawed-out chicken breasts one evening, I came up with this filled one. It was well-liked in our home, and I’ve since made it once more! Although my husband like it with bacon, I prefer it without.

Ingredients

  1. 4 large skinless, boneless chicken breasts, pounded thin, or more to taste
  2. salt and ground black pepper to taste
  3. 1 cup diced ham
  4. 1 cup low-fat mayonnaise (such as Smart Balance®)
  5. 1 cup low-fat sour cream
  6. ½ cup shredded Cheddar-Monterey Jack cheese blend
  7. ½ cup shredded mozzarella cheese
  8. ½ cup shredded Parmesan cheese (Optional)
  9. ½ teaspoon onion powder
  10. ½ teaspoon garlic powder
  11. ½ teaspoon smoked paprika
  12. 8 slices bacon, or more to taste (Optional)
  13. 8 toothpicks, or as needed
  14. ¼ cup whole wheat bread crumbs, or as needed

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Season chicken with salt and pepper.
  2. Mix ham, mayonnaise, sour cream, Cheddar-Monterey Jack cheese blend, mozzarella cheese, Parmesan cheese, onion powder, garlic powder, and smoked paprika together in a large bowl. Place 1/2 cup mixture on each chicken breast. Roll chicken over filling, wrap with 2 slices bacon, and secure with toothpicks.
  3. Place bread crumbs in a shallow bowl. Roll each chicken breast in bread crumbs to coat. Place chicken in a baking dish.
  4. Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  5. You can also use homemade whole wheat bread crumbs, made by toasting several whole wheat bread heels and pulsing them in a food processor.
