Sausage, onions, potatoes, and peppers are collectively known as S.O.P.P. It’s simple to prepare this tasty sausage and potato skillet for your family.

Ingredients

  1. 2 tablespoons vegetable oil
  2. 6 potatoes, peeled and cubed
  3. 2 pounds smoked sausage, sliced
  4. 1 onion, sliced
  5. 2 green bell peppers, chopped

Instructions

  1. Heat oil in a large skillet over medium heat. Place potatoes in skillet, cover, and simmer. Turn occasionally until potatoes are almost tender and a little browned, about 10 minutes.
  2. Stir in sausage, onions, and peppers. Cover and cook for about 5 minutes or until onions and peppers are desired tenderness.

I grew up eating this and have also made it for years. Instead of preparing in a skillet I use a baking pan and cook it in the oven. I drizzle olive oil on the bottom of the pan, use italian sausage instead of smoked and add whatever type of peppers I have on hand. I also season w/Adobo. Bake 375 for 45-60 minutes. A great meal in one and only use one pan!

I’ve used it a lot in different ways, for example, adding scrambled eggs, sausage, browned crumbled beef, kielbasa, fresh caught butter fried pike and perch. I’ve even had it with shredded lamb, rabbit and, although I wasn’t the one that made it this way, on the border. Sometimes, I’ll add Mexican, or Cajon seasoning stuffing it into pita pockets or soft taco shells, and freeze them for future uses Just a great all around recipe.

I doubled this recipe for a Memorial Day Pool Party & used 3 types of sausage, baby red & Yukon gold potatoes & added baby sweet peppers. My family tested it tonight before tomorrow’s celebration. It was a total thumb’s up! Thank you for the inspiration. Tomorrow I will just reheat in oven & then broil for 1-2 minutes. Also making mini elote corn cobs. Yum!

Simmer cubed raw potato in 2 tbsp of oil for 10 minutes and add onion and somehow it’s supposed to be cooked 5 minutes later? Zero spice, zero acid. Bell peppers and onions cook nowhere near the same rate. There’s so much wrong with this. Look elsewhere

Love this! I cooked potatoes in microwave to soften first. sprinkled with garlic pepper, added minced garlic and used 1 kielbasa and 1 cup of smokies. Didn’t have peppers but added green beans. at the end I put 2 tblsp. garlic butter. Delicious, easy and can be made any way you want too.

Super Yummy!! We all loved it. I didn’t have green bell peppers, so I used yellow and orange bell peppers. I did add some veggies for additional color like green beans, wax beans, a little bit of red pepper and a carrot. I cooked the potatoes separately from the sausage, like a user suggested, and I added salt to the potatoes at the beginning like another user suggested for more firm potatoes. It did work! my potatoes were not mushy, I added a little bit of black pepper too. I tried the meal before I added the extra veggies and it was already delicious, so for the flavor it didn’t need anything else, I just wanted more color, and to be able to feed more veggies to the kids.

Very tasty and so easy to make. I used Andouille sausage, and a dollop of sour cream (to calm down the sausage). I make this often, it’s great for dinner and the leftovers make a wonderful hash with our farm fresh eggs.

Very similar to the one I’m used to. Some differences though: my mom and I throw in everything at once, helps with flavor I think. Also add lots of cajun seasoning while it’s cooking. It was the only way to get me to eat some veggies as a kid 🙂
