Ingredients

  1. 7 large cloves garlic, minced
  2. 3 tablespoons olive oil
  3. 2 tablespoons paprika
  4. 2 tablespoons dried oregano
  5. 1 ½ tablespoons kosher salt
  6. 1 ½ teaspoons ground black pepper
  7. 1 (4.5 pound) boneless pork shoulder

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C) with a rack in the middle of the oven. Line a large rimmed baking sheet with heavy-duty aluminum foil and a rack.
  2. Stir together garlic, olive oil, paprika, oregano, salt, and pepper in a small bowl. Rub pork thoroughly with garlic mixture. Place fat-side up on rack on the prepared baking sheet. Let pork stand at room temperature for 30 minutes.
  3. Bake, uncovered, in the preheated oven until a thermometer inserted into the thickest portion registers between 195 to 205 degrees F (90 to 96 degrees C), about 4 1/2 hours.
  4. Let stand 20 minutes before shredding.

Oh, I just love slow food! This recipe contains a rich seasoning blend that is rubbed all over. Be sure to use a food-grade glove, and really work it in. It’s just the right amount of seasoning for the weight, and It creates a nice dark, bark to the roast that will have your family competing for the ends! Don’t be afraid of a fat cap. For the long roasting time, the fat will render and run down into the meat, making it tender and juicy. The roast may be simply sliced and served as a main, or it may be shredded, ready for a saucy sandwich of your choosing. Lots of versatility, for lefties, if you have any, lol!
