Quick and Easy Curry Chicken Salad for Lunches

One of my favorite recipes to prepare in advance for a week’s worth of simple yet delectable lunches is curry chicken salad. This dish has a ton of wonderful texture and is quite tasty. This chicken salad can be consumed in a variety of ways, including sandwiches, salads, lettuce cups, spooned into cucumbers or other vegetables, dipped in pita, spread on toast, or just eaten directly from the container. Curry chicken salad also makes a delicious party appetizer. To serve, spoon some into little cucumber cups, finger sandwiches, or crackers.

Ingredients

  1. ½ cup plain yogurt
  2. ¼ cup mayonnaise
  3. 1 tablespoon curry powder
  4. ½ pound shredded cooked chicken breast
  5. 1 medium apple, peeled and diced
  6. 2 stalks celery, diced
  7. 1 stalk green onion, finely chopped, or more to taste
  8. ½ cup sliced almonds
  9. ¼ cup raisins
  10. salt and ground black pepper to taste

Instructions

  1. Whisk yogurt and mayonnaise together in a medium bowl until blended. Add curry powder and stir to combine. Stir in shredded chicken until evenly coated. Add apple, celery, green onion, almonds, and raisins; season with salt and pepper. Stir gently to until thoroughly combined and all ingredients are coated with curry-yogurt.
  2. Serve immediately or refrigerate until ready to serve.
  3. You can substitute a small piece of shallot (minced) for the green onions.
