Pulled Pork Chilaquiles

A dinner this excellent while camping is unheard of. Cooking over the fire is minimized by preparing the meat at home. Reheat leftovers and serve with a fried egg for a breakfast that will keep you going all day. Store leftovers in the cooler.

Ingredients

  1. 2 tablespoons unsalted butter
  2. 1 yellow onion, thinly sliced
  3. ½ (16 ounce) jar tomatillo salsa
  4. 1 cup chicken stock
  5. 8 cups tortilla chips
  6. 2 ½ cups shredded aged Cheddar cheese (such as Beecher’s Flagship)
  7. 2 cups citrus-braised pulled pork

Instructions

  1. Set a cast iron Dutch oven over hot coals. Heat butter until melted. Add onion; cook, stirring often, until soft and deeply browned in parts, 5 to 7 minutes.
  2. Pour salsa and chicken stock into the Dutch oven; bring to a boil. Layer in 1/2 of the chips, Cheddar cheese, and pulled pork. Repeat with the remaining chips, Cheddar cheese, and pulled pork (see Cook’s Note for recipe link). Cover and cook until cheese is melted, about 5 minutes.

  5. Serve with chopped jalapenos, crumbled cotija cheese, Mexican crema or sour cream, lime wedges, and chopped fresh cilantro. Use a mix of Cheddar cheese, Gruyere, or Monterey Jack as desired.
  6. Take the Dutch oven off the coals if it starts to get too hot. The residual heat will be enough to melt the cheese.

I made this into a casserole since it was for a brunch and not camping. I made the pork and salsa sauce the day before. In the morning I mixed the sauce and meat together, added the shredded cheese and then mixed in the chips, crunching them a little into the mix to absorb some of the juices. I put it all into a 13×9 baking dish (not layered). To make it a little more “breakfasty,”as the submitter suggested, I added eggs to the top. I pushed a water glass bottom into the mix creating 8 slight divots and then cracked an egg into each divot. Baked in the oven. It was delicious and everyone raved about it. I will definitely make this again!
