Ingredients

  1. 1 cup pineapple juice
  2. ½ cup packed brown sugar
  3. ⅓ cup light soy sauce
  4. 2 pounds chicken breast tenderloins or strips
  5. skewers

Instructions

  1. In a small saucepan over medium heat, mix pineapple juice, brown sugar, and soy sauce. Remove from heat just before the mixture comes to a boil.
  2. Place chicken tenders in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes.
  3. Preheat grill for medium heat. Thread chicken lengthwise onto wooden skewers.
  4. Lightly oil the grill grate. Grill chicken tenders 5 minutes per side, or until juices run clear. They cook quickly, so watch them closely.

My whole family, including grandkids, love this recipe. The marinade adds just enough flavor without overpowering the chicken. I make the recipe as written, although sometimes I put pineapple chunks on the skewer as well. It’s a summer favorite.

Great simple marinade. Since there are two of us, I halved the ingredients and added about 1/2tsp dry ginger and 1/2 tsp granulated garlic. I used one chicken breast cut into 1/2 inch cubes on skewers and broiled on high. 4 minutes then turn over and 4 more minutes. I’m saving the marinade in the freezer for next time. Added a bit of cayenne before freezing. Curiosity is looming 🙂

I made this recipe for 5, and I used the changes/additions suggested by Crystal$. I doubled the amount of marinade, and held back half of it. I marinated chicken tenders for 2 hours, then we grilled them. I made some Korean buckwheat soba noodles, drained them, and heated a deep saute pan with some oil. Then I added the noodles, the marinade I’d held back, and added the grilled tenders on top. I heated this, tossing, for about 5 – 10 minutes and served. Wonderful!

Marinades such as this don’t actually penetrate the meat as the molecules are simply too large to do so. And hence, getting the taste of the marinade requires “flash” cooking of the sugars sitting ON the meat to capture that flavor. Followed the recipe, cooked on medium low heat and … very little of the marinade flavoring survived. If I did this again, I think I might cook the tenders first (sous vide), THEN marinade, THEN finish off in a very hot skillet.

Per other comments I added fresh ginger, garlic, sesame oil. I made stir fry using fresh veggies. Put marinade in the wok until almost boiling, cooked chicken cubes in it, added corn starch to thicken and the added veggies. Very very good, but, I didn’t really taste the pineapple – perhaps because of the items I added. Next time I’ll add more juice and less oil. Definitely will use the recipe again.

Nice simple recipe that tastes good. This is good for a weeknight meal when your not up for a lot of work & mess. I cooked it on an indoor grill that I covered with foil to keep the marinade from sticking to the grill & making a mess.

Made it except I left out the sugar (can’t have it). Used my Foodi to grill the chicken, when it was done, I brought the marinade to a boil in a saucepan and then threw the chicken in for a few minutes… WOW!

I followed the recipe for the chicken then added red, yellow and orange peppers. Then I made a sauce with the marinade, and pineapple chunks. I added 1 TSP. corn starch to thicken it. Everyone liked it.

Delicious! Easy and so so good! Grilled five minutes on each side and it was perfect! I opted to add pineapple to some of my skewers. The keys are marinate well and don’t overcook!

I used boneless thighs. and marinated overnight due to an emergency causing me to not cook dinner the night I was supposed to serve these. This was a mistake as the meat was broken down too much. My young adult children didn’t notice or mind, and actually raved about the flavor. I thought it needed more of something sharp – vinegar or something, maybe.

This came out pretty good for a light and easy meal. I did make slight alterations to it–since I didn’t have skewers, I’ve used dry spaghetti as a substitute which actually worked. As for the pineapple juice, I got it canned from pineapple chunks. And since I don’t have a grill, I broiled it like I’ve done with other grilled recipes. I did pair it with microwaved (not frozen) organic brown rice. It came out so good. If I ever get an indoor grill, I would love to make this again.

I took the recommendation of others and added about a tablespoon of jarred, minced garlic and some grated fresh ginger. I cubed chicken chicken breasts and marinated them for about five hours before skewering them with pineapple chunks, red peppers and Vidalia onions. I boiled the marinade and basted them a couple of times toward the end of the grilling process. Very good!

The taste was good. I used fresh pineapple and marinated 1 hour instead of 30 min. Clearly this was too long and the chicken was disintegrating. It had a mushy exterior once cooked. lessened learned…
