Ingredients

  1. 1 (12 ounce) package linguine pasta
  2. ¼ cup olive oil
  3. 6 ounces pancetta bacon, diced
  4. 5 shallots, chopped
  5. 2 cups fresh sliced mushrooms
  6. 4 cloves garlic, chopped
  7. 2 pinches freshly ground black pepper, or as needed
  8. 2 pinches dried oregano
  9. ½ cup chicken broth
  10. ½ cup freshly grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain, transfer back to the pot, and set aside.
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Cook pancetta in hot oil until just beginning to brown. Stir in shallots, mushrooms, garlic, pepper, and oregano; cook until fragrant, about 1 minute.
  3. Pour in chicken broth; bring to a boil over medium-high heat, stirring occasionally, for 1 to 2 minutes. Reduce heat, cover, and simmer for 5 to 7 minutes.
  4. Strain liquid from the pan into pasta; toss to coat. Divide pasta onto individual serving plates, then top with equal portions of pancetta and mushrooms. Serve with Parmesan cheese and pepper.

Delicious! Like others, I made some minor adjustments. Used prosciutto, because that’s what I had. Added some cream, red pepper flakes. Next time I will add cheese to pasta / liquid mixture.

This is a very good and easy recipe. I did add some frozen green peas and a splash of half and half for more flavor. However, I tasted as written – it is very good!

Made this for a quick dinner so I used what I had in the house. Instead of panchetta I used turkey bacon (lol) I followed the directions , but I had to add more broth and heavy cream . I seasoned to taste with salt and garlic powder in addition to the pepper and oregano overall not a bad recipe I will try again with the panchetta !! Happy cooking oh and I added spinach just because I like spinach .. very good addition

This recipe is very good as is. As a preference, since this recipe calls for mushrooms, I added a bit of white wine while I sauteed them with the rest of ingredients to enhance the flavor. It was very good. I garnished it with fresh Italian parsley which I also added during cooking. This recipe is all about the pancetta and the mushroom therefore, try to get the best mushrooms and pancetta you can. I also would undercook the pasta and finish it when putting the rest of the ingredients to simmer so the liquid starts sticking to the pasta sooner

This was very good. My 93 year old mom loves pasta. I have never had pancetta. If I was prepared…I would have gotten some. I used reg. bacon. This is a great recipe to add extra stuff to. Next time I’ll get some veggies in mom.

It was very flavorful, but the pancetta is expensive for 6 oz I paid about $23 just for the pancetta. I won’t make it again because of cost. The pasta isn’t out of this world so it was good to try, but not worth the cost for me.
