Pan Roasted Spanish-Lemon Drumsticks with Potatoes

I quickly prepared the traditional vegetarian French dish ratatouille on a sheet pan with the most tender and caramelized veggies.

Ingredients

  1. 3 pounds bone-in chicken drumsticks
  2. 1 tablespoon paprika
  3. 3 tablespoons olive oil, divided
  4. 1 ½ tablespoons chopped garlic, divided
  5. ¾ teaspoon salt, divided
  6. ½ teaspoon ground black pepper, divided
  7. 2 pounds red potatoes
  8. 2 lemons, thinly sliced

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Mix chicken with paprika, half of the olive oil, half of the garlic, half of the salt, and half of the pepper together in a bowl until evenly coated. Toss potatoes with remaining olive oil, garlic, salt, and pepper in a separate bowl; add lemon slices and toss well.
  3. Arrange chicken in a roasting pan and surround chicken with potatoes and lemon slices.
  4. Bake in the preheated oven for 25 minutes; rotate and flip chicken and potatoes. Continue baking until chicken is no longer pink in the center and the potatoes are tender, 20 to 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  5. If you want crispier chicken and potato, broil on high at the end for additional 3 minutes or until the desired texture is achieved.

I also added more of the spices. It turned out very good. It was super easy to make. Next time I’m going to move it up to the top rack and broil for 5-10 minutes.

Very tasty and easy. I doubled the spices as per other commentators. I don’t understand why the instructions would have you apply the oil/garlic/spices in two bowls and then throw them all together into a roasting pan. Seems like a wasted dirty bowl to me.

I like drumsticks and I like this recipe. It’s a quick fix meal. I was lucky to have all the ingrediants in my pantry and had enough for leftovers. The flavor is simple and tasty. Will do this again and again.

Made as written and this turned out good. Next time I will double the spices but that is the only change I will make. This was super easy to make yet looked like you went to a lot of trouble to make it.
