Oven-Baked Pepper Steak

  4.2 – 81 reviews  • Steaks

Freshly cooked beets and a brine comprised of sugar, pickling salt, and vinegar are all you need to make pickled beets. When I have a plentiful supply of fresh beets, this recipe is one of my “must-do” annual canning recipes.

Prep Time: 15 mins
Cook Time: 1 hr 40 mins
Total Time: 1 hr 55 mins
Servings: 4

Ingredients

  1. 1 pound cube steak
  2. salt and pepper to taste
  3. ¼ cup all-purpose flour, or as needed
  4. 2 tablespoons vegetable oil
  5. 1 medium onion, sliced
  6. 1 medium green bell pepper, sliced
  7. 1 clove garlic, minced

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Season steak with salt and pepper, then dredge in flour; shake off any excess.
  3. Heat oil in a large frying pan over medium-high heat. Sear steaks in hot oil, then transfer to a large casserole dish. Sprinkle onion, pepper, and garlic over top; pour 2 cups water into the dish. Cover the dish tightly with aluminum foil.
  4. Bake in the preheated oven until steak is tender and vegetables are soft, about 1 1/2 hours. An instant-read thermometer inserted into the center of the steak should read 140 degrees F (60 degrees C) for medium.

A definite keeper! I followed the suggestion of using a can of French Onion soup instead of the water (Beef broth would work well too). It really boosted the flavor. I served it with mashed potatoes the first time. I served leftovers with fried rice. I love finding different recipes for inexpensive cube steaks. Well done!

I followed the recipe. It was great! My husband loved it. Thanks for a great recipe.

This is SOOOO GOOD… I follow all the recipe, however at the end, I sometimes put some Swiss or Pepper Jack Cheese on top the last 10 min…. My BF loves this & asks for it frequently… It’s almost like a Philly Cheese Steak without the rolls (& calories!) TRY it, you won’t be disappointed…

Good but mine ended up with sauce that was too thick from all the flour.

I made this yummy meal tonight for dinner i also prepared Cabbage and Asparagus (my family loves green veggies) and we paired it with Brown rice to make it more healthy…

GREAT recipe. Usually I use a can of cream of mushroom soup when making cube steaks making it so rich. This time I used a beef granule and JUST one cup of water. Thoroughly enjoyed it. Loretta P.

Turned out well. Only 4 stars because for me I like a bit more flavor, and I did not use 2 cups of water ( that would have been too much, only need enough water, to coat the bottom of baking dish. Over all a great recipe.

I used beef broth instead of water and doubled the recipe. Turned out great! Very tender. I made gravy out of the leftover juice and the seasoned flour that I dredged the meat in.

Soggy and bland, but tender.

It says 2 cups of water……. But I didn’t measure. I poured till it covered the meat

Meat was tender, but gravy was thin and flavorless. I will not make this again.

the meat was super tender, but the flavor wasn’t all there. It seemed to need something but not sure what.
Megan Brown
Good flavor.

Made this for my picky hubby and my three boys. And they liked it !!! And so easy to prepare for an extremely busy work mom with three toddlers under 5 yrs old. Tasty – so this will be on the household menu..

This was good and the steak was nice and tender. Took the advice of others and used beef broth instead of water, also deglazed the pan with the beef broth before pouring over the steak. We felt it could have used a little more flavor and we didn’t care for the way the outside of the steak got soggy/slimy. I think that dredging the steak in flour caused the unpleasant texture and will try leaving out the flour next time. Will definately make again adding my own adjustment to make it a 4 or 5 star recipe in my book….

This was great. My kids are kind of picky eaters and they wanted seconds!! Will definitely make again!!

My Grandmpther made this often with a couple of changes. We used a cup of beef broth and a cup of V-8 juice for a bolder more tomato based gravy. Also I cooked longer it longer. Makes a great family dish, especially when strapped for time and money.

I made this for my family about two months ago. It was delicious and I only changed a few things. First, I added one chopped jalapeño and stir fried it when I cooked the onion. Second, it needed a little more flavor so I added 1 tsp of cumin. The last small change I made was to use 1 1/2 cup of water, and 1/2 cup of cream, then cook over the stove to have a quicker meal. It came out simply amazing.

Cube steak? likely a term for hamburger, perhaps Bologna, or is this something new?
Matthew Cole
I was surprised I thought this was so bad because I’m not a picky eater. The gravy was weird and the meat needed to cook ALOT longer.
Deborah Morgan
i added some smoked paprika to it. I think it was just the right touch. Also I added potatoes.
