This hunter’s chili is rather tasty but not overly spicy; for those who prefer it hotter, it can be increased in heat with hot sauce. Game may be substituted with beef. creates a great day-in-camp campfire supper and freezes nicely. Serve with cooked pinto beans over rice or in a mixture.

Ingredients

  1. 4 tablespoons bacon fat
  2. 1 large red onion, chopped fine
  3. 2 pounds coarsely ground venison
  4. 1 pound coarsely ground beef
  5. 3 pounds coarsely ground pork
  6. 3 tablespoons chili powder
  7. 1 ½ tablespoons cayenne pepper
  8. 1 tablespoon minced garlic
  9. 1 ½ teaspoons ground cumin
  10. 3 (8 ounce) cans tomato sauce
  11. 2 cups water
  12. 1 (6 ounce) can tomato paste
  13. 2 tablespoons paprika
  14. 2 tablespoons dried parsley
  15. 1 tablespoon kosher salt
  16. ½ teaspoon dried oregano
  17. ½ cup masa harina

Instructions

  1. Heat bacon fat in a 5-quart Dutch oven over medium heat. Add onion and cook until tender, about 5 minutes. Add venison and brown well, about 10 minutes.
  2. Brown beef in a separate skillet over medium heat, 7 to 10 minutes; add to Dutch oven with venison. Brown pork in the skillet over medium heat, 10 to 15 minutes; add to Dutch oven with meat mixture. Add chili powder, cayenne pepper, garlic, and cumin. Cook over medium heat until flavors have combined, stirring occasionally, about 30 minutes.
  3. Stir tomato sauce, water, tomato paste, paprika, parsley, salt, and oregano into the meat mixture in the Dutch oven. Bring to a boil. Reduce heat to a simmer and cook for about 1 hour. Stir occasionally and add water as needed.
  4. Mix masa harina into the meat mixture in the Dutch oven; cook until thickened, at least 30 minutes. Add more water as needed.
  5. Use any type of game meat you prefer, such as moose or elk.

A really good chili, that re-heats very well too! I scaled this way back since it was just for my husband and I. Used only about 2 lbs of meat, and it was all ground venison. I also added a chopped bell pepper, some chopped carrot, and some beans to it. The addition of the masa harina was unexpected too. It made the chili thick and added a little bit of corn flavor to it–I really liked it! I really enjoyed this chili; and I almost think it tastes better the next day!
